Perfect for Any Occasion
With everything going on in the world, and lots of time to spend at home, making cookies is one of the best past times for creating memories.
Sugar cookies are perfect for any occasion: birthday parties, school parties, holidays, and even as a way to say thank you. The best part of cut-out cookies is that you can shape them to be anything you want!
My great-grandmother shared this recipe with my mom who passed it down to me. I've passed it down to my daughters who will someday pass it on to theirs. Did I mention this makes great family memories, too?
I hope you'll enjoy it as much as we have over the years.
TIP: Add a little more flour to make the dough stiffer in order to roll out and make cut-out cookies.
Ingredients
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
3/4 cup vegetable oil
Instructions
Pre-heat oven to 350°F.
Cream sugar, eggs and vanilla together. Make sure there are no lumps.
Stir in baking powder and salt. Mix well.
Add flour, 1/2 cup at a time, while stirring until it has a thicker consistency.
Pour in 3/4 cup of vegetable oil. Stir well until the dough is thick.
If making cut-out cookies, add an additional 1/2 cup of flour to the dough to make it easier to roll out.
Refrigerate for 30 minutes to one hour.
Lightly flour a cutting board and lightly spray a cookie sheet.
Remove the dough from the fridge and create a ball out of the dough.
Place dough on the cutting board and roll it out with a lightly floured rolling pin.
If making regular round sugar cookies: Use a regular spoon to scoop dough and create small balls. Place on cookie sheet. With a flat-bottom drinking glass, lightly coat the bottom with sugar and flatten the ball.
For cut-out cookies, use the cookie cutter of your choice on the rolled-out dough and then place it on the cookie sheet.
Bake until very lightly browned. (You may not want the brown edges so, just bake for a few minutes less)
Decorate with icing and sprinkles if desired.
